Oatmeal Chocolate Chip Energy Bites

Ingredients (makes approximately 25 vegan energy bites):

  • 1 cup oatmeal (dry)
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup ground flaxseeds
  • 1/2 cup mini chocolate chips
  • 1/2 cup maple syrup
  • 1 tbsp. chia seeds (optional)
  • 1 tsp. vanilla extract


Put all ingredients into a bowl.  Stir until thoroughly mixed.  Cover and chill in the refrigerator for 1 hour.  After chilled, roll into 3/4 -1 inch balls.  Refrigerate to keep.  Enjoy!
